Pasta with Sausage and Greens

1/2 package of pasta (cavatappi pictured)

1 onion, diced

1 bell pepper, diced

3 cloves garlic, diced

2 Field Roast sausage Chipotle flavor (or pick your favorite vegan sausage)

a good bit of greens of choice (we often use spinach or kale).

garlic powder

nutritional yeast

black pepper

soy sauce

peanuts

Cook the pasta according to the package.

Sauté the onion for a couple minutes. Add bell pepper and garlic and sauté for a couple minutes more. Rip the sausage into pieces and add to the pan, sauté until everything looks cooked. Rip the greens into pieces and sauté for just until greens start to wilt. Add the drained, cooked pasta and stir. Turn off heat.

Add garlic powder, nutritional yeast, and black pepper, and stir. Add soy sauce and peanuts and stir. Serve.
